Friends, my entire world just changed.
I have seen the light.
Over the weekend, I ate BEEF for the first time in 20 YEARS.
AND THEN…just yesterday, I ate CHEESE for the first time in 20 YEARS!
Talk about tastebud whiplash! — And Instagram BACKLASH! Wow.
I posted a video on Instagram of eating the meat and the vegan community went absolutely berserk, telling me I’m an animal killer, I’m weak, contributing to global warming, etc.
But no mind.
I actually ate it twice. The first time, I cooked some ground beef and added it to a homemade tomato sauce that I served over spaghetti squash, so it really tasted like pasta! It was actually delicious — it tasted like childhood. ?
And then the second time, I ate Hamburger Soup (my own recipe, which I will share on Wednesday), and it was SO tasty! Think rustic vegetable soup with ground beef in it.
I haven’t worked my way up to beef chunks yet — I’m still a little chicken…no pun intended.
And then YESTERDAY, I ate scrambled eggs with cheddar cheese mixed in (Specific Carb Diet legal!) Which…was euphoric.
And then for DINNER, I made the most OUTRAGEOUS grilled cheese sandwich.
The “bread” was made out of cauliflower, almond flour, eggs, and parmesan cheese (also SCD legal!) and I stuffed a mixture of cheddar and swiss between it! (Also SCD legal!)
Oh my gosh it was the best thing I have EVER eaten.
Now listen, I didn’t eat just ANY beef and cheese.
The beef was 100% grass fed, organic 93/7.
And the cheese came from GRASS FED cows.
Both of which I ordered from Whole Foods via Amazon.
But having GRASS-FED beef and cheese made from GRASS-FED cows is super important because the cows weren’t given added hormones, or antibiotics, they weren’t fed genetically-modified corn. But rather, they were eating grass and bugs and were getting sunshine and living healthy lives. AKA: thriving cows.
Now for the big question…..WHY?
WHYYYYYY after 20 years of not eating meat or cheese am I all of a sudden partaking in these culinary delicacies?
First — let me preface this by saying, the Specific Carbohydrate Diet does allow a very few, very specific hard cheeses. Cheddar, Swiss and Parmesan being three of about 20.
And meat has always been allowed on the diet.
I have just chosen not to eat them. The meat for — just being “icked out” by it… And the cheese, because in the preliminary phase of the diet when I was getting out of the 11 month Ulcerative Colitis flare that had me on bedrest, cheese was off limits. They suggest adding it in only after your symptoms subside, and then adding very slowly and cautiously after that. And frankly, I didn’t miss it and I was just really scared of “upsetting the applecart” if you will, and triggering another flare. After all, I had just gotten my life back.
BUT…and now for the answer of why….
My husband and I are trying to have a baby! And so I want to have my body be as nutritionally sound as possible. And so that means eating the broadest spectrum of the Specific Carbohydrate Diet — including meats, legal cheeses, honey, legal beans etc.
SO…here we are!
I am totally expanding my repertoire. And it’s been absolutely glorious.
I don’t want to place too much of a spotlight on food, but wow — it’s like my eyes have been opened and I’m seeing everything I’ve been missing for TWENTY YEARS!
Now, of course, I am going to be eagle-eyed on my Ulcerative Colitis symptoms going forward, and at the first inkling of one, I am going to put the kibosh on it. But wow — I feel like a new woman!
