Ingredients: 2 cans 15 oz each black beans, drained and rinsed. ½ cup breadcrumbs. ¼ cup finely chopped red onion. ¼ cup finely chopped bell pepper. 2 cloves garlic, minced. 2 tablespoons barbecue sauce. 1 tablespoon ground flaxseed mixed with 3 tablespoons water as egg substitute. 1 teaspoon smoked paprika. ½ teaspoon cumin. Salt and pepper to taste. Burger buns and toppings of choice lettuce, tomato, avocado, etc..
Instructions: Preheat grill to medium-high heat. In a large bowl, mash black beans with a fork or potato masher until mostly smooth but still a bit chunky. Add breadcrumbs, red onion, bell pepper, garlic, barbecue sauce, flaxseed mixture, smoked paprika, cumin, salt, and pepper to the mashed beans. Mix until well combined. Divide the mixture into 4-6 equal portions and shape into burger patties. Place the patties on the preheated grill and cook for 5-7 minutes per side, or until heated through and grill marks form. Toast the burger buns on the grill if desired. Assemble the burgers with your favorite toppings and serve immediately.
