What I Eat in a Day (Sick Edition)!


So, I’m sick. Fever, chills, body aches, negative covid test — whole nine yards.

And so, I thought I would share what I ate today…as a sickie.

I woke up and had a spoonful of raw, unfiltered honey.

Honey is anti-inflammatory and also an excellent natural remedy to soothe a cough and sore throat. It’s also really good for gut health. I recently found this honey, and it comes with the honeycomb bits on top, that they call “farmer’s chewing gum” and it’s so incredibly delicious. It tastes like candy. I eat it with a spoonful of almond butter and sprinkle of cinnamon.

And I also made myself a gallon of “glow juice” aka green juice that I sipped on throughout the day.

Ingredients: (Makes literally 64 oz)

2 cucumbers
3 large carrots
1 lemon
2 apples
2 oranges
2 inches of ginger
5 stalks of kale
2 stalks of celery

My Breville juicer is on sale today for 33% off on Amazon! It is the best juicer on the market. I got it when I was in that horrible, 11-month long ulcerative colitis flare and was juicing every day. It is the best!

I had my tropical berry banana ice cream which felt really good on my throat.

Ingredients:

2 frozen bananas
1 cup frozen pineapple
1/2 cup frozen strawberries
1/2 cup frozen mango
1/2 cup frozen blueberries
3 Tbsp almond butter
3 Tbsp raw, unfiltered honey
1 tsp cinnamon
1/4 cup almond milk (homemade with the NUTR, or — this brand is SCD friendly)

I also had a pack of my pumpkin seeds and 2 hard boiled eggs as a snack.

And then a ginormous pot of homemade vegetable soup.

Ingredients:
1/2 red onion
3 garlic cloves
2 large carrots
handful of cherry tomatoes
2 stalks of celery
1 head of broccoli
1 zucchini
handful of green beans
1 red pepper
1 green pepper
1/2 cup frozen peas
1 box of vegetable broth (This brand is SCD friendly)
1 Tbsp Italian seasoning
2 tsp garlic powder
2 tsp onion powder
Salt and pepper

And then I rounded out the day with another spoonful of almond butter and raw unfiltered honey.

I’m hoping that with all the hydrating foods today that I will have flushed everything out of my system and be ready to go back to normal tomorrow.

Oh — and don’t worry – Steven still ate like a king today ?

I utilized my freezer meals of leftover beef stew for lunch with sourdough bread and leftover grilled veggies for lunch from our dinner the night before (pictured below).

And then for dinner, I called in the big guns and had a delivery from Whole Foods, and warmed up one of their pre-made meatballs with chickpea pasta and grilled zucchini.

So there you have it, sports fans. Who knows – perhaps I was cheering too hard for the Bengals on Monday night and got sick. I guess we will never know.
